There was a time when an immense sea of millennium-old holm oaks stretched beyond the horizon in the Valley of los Pedroches. Their bronze fruits fed a unique breed of animals: 100% Ibérico pigs. A legacy of our ancestors, transferring the character, flavor and perfect texture into each piece. A legacy that has lived on to the present day.
Today, these same millennium-old holm oaks feed the descendants of that special lineage of animals, within an ecosystem considered unique in the world: the Dehesa.
These are the two key factors—breed and environment—to making one of the most exquisite delicacies from our land: Alta Expresión Ibérico products.
A special area set in the south of Spain, in the north of the province of Córdoba, which is home to one of the largest holm oak forests in the world: nearly 740,000 acres of woods and fields offer our Ibérico pigs the ideal environment to grow in total freedom, which influences the quality of our products.
The Dehesa, where each animal has 2.5 acres to roam around, is a privileged location for aging and preparing Ibérico products.
Our Dehesa, covered with the best grass and millennium-old holm oaks, which for generations have been providing the pigs with their valuable acorns. This characteristic acorn of the Dehesa gives our Ibérico products their special flavor, making them unique.
